Woodburn & Associates, Inc.
was contacted by the building Architect to complete documentation which was
lagging behind the Owner’s schedule. We revised the program and schematic
plans to better serve the 1,900 employee anticipated population of this part
of the campus and be within the budget. Programming discussions with the
Owner and Operator revealed the necessity for minor expansion of the
building which is a wedge between 2 office towers. The flow of patrons into
and around the servery was streamlined for rapid service. The flow for the
food preparation, service, and clean-up was made to function more
efficiently and to be more operator-friendly.
The multi-station servery
features a stone hearth oven, an induction cooking station for the chef’s
specials, served deli, grill station, and island salad & soup bar, plus a
variety of self-service foods. The kitchen and servery are 3,703 square
feet. Less the vendor-provided beverage dispensers, the cost of equipment
and millwork was contained at $598,000. Because of space constraints, term
storage and offices are supplemented with space in the existing Knuckle 1
food facility on the campus. |

Scope of Responsibility:

Review of
schematic documentation, revisions to programming and space plans;
intense coordination with architects, engineers, interior designers and
operator; complete CAD CD package including dimensioned rough-ins,
manufacturers’ drawings for ventilation and refrigeration; Millwork details,
proprietary specifications; bid forms; equipment installation coordination;
installation inspections, and punch reports. Documentation for the entire
building was completed in 3 months. |
