Synopsis:

This well
known national association had expanded its operations into 4 locations
throughout the metropolitan DC area. With 850 staff members, consolidation
into this 330,000 ft2 Fairfax building offered the opportunity
not only to upgrade their infrastructure, but their environment and human
resources, as well. Good foodservice is among the most fundamental employee
amenities. The NRA Café is a pleasant respite from the office environment.
For this modest population, plus visitors to the National
Firearms Museum and local area patrons, we chose a modified scramble system
cafeteria to achieve the projected throughput. Display cooking separates
the hot foods and grill stations; the central island is a combination of
deli, salad bar, and desserts to efficiently utilize the projected
staffing. Two beverage stations and a dual cashier complete the servery.
Soiled trays are conveyed back to the servery behind the dining room wall.
Kitchen & servery assume 3,610 ft2 and dining is 3,670 ft2.
W&A was also involved in the Café
opening; planning menus, recipes, operations, managing the pre-opening, and
training staff. |
